Instructions

 

  • Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • Combine Dry Ingredients: In a medium bowl, whisk together flour, baking soda, and salt. Set aside.
  • Cream Butter and Sugar: In a large bowl, cream together the 1/2 cup butter, shortening, and granulated sugar until light and fluffy.
  • Add Egg Yolks: Beat in the egg yolks one at a time, then stir in 1 teaspoon vanilla extract.
  • Add Dry Ingredients
    : Alternately add the flour mixture and buttermilk to the creamed mixture, starting and ending with the flour mixture.
  • Fold in Coconut and Pecans: Stir in the coconut and chopped pecans.
  • Whip Egg Whites: In a separate bowl, beat the egg whites until stiff peaks form. Gently fold into the cake batter.
  • Bake: Pour batter into the prepared pan. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  • Make Frosting: While the cake cools, make the frosting. Beat together the cream cheese, 1/2 cup butter, and 1 teaspoon vanilla until smooth. Gradually beat in the powdered sugar.
  • Frost Cake
    : Once the cake is completely cool, spread the frosting over the top. Sprinkle with additional chopped pecans and coconut.
