Italian Cream Cake

Ingredients:

– 1/2 cup unsalted butter, room temperature
– 1/2 cup shortening
– 2 cups granulated sugar
– 5 large eggs, separated
– 1 tablespoon pure vanilla extract
– 2 cups all-purpose flour
– 1 teaspoon baking soda
– 1 cup buttermilk
– 1 cup flaked coconut
– 1 cup chopped pecans, toasted
– Cream cheese frosting:
– 8 ounces cream cheese, softened
– 1/2 cup unsalted butter, softened
– 1 teaspoon pure vanilla extract
– 4 cups powdered sugar
– Additional chopped pecans and flaked coconut for garnish

Instructions:

1. Preheat the oven to 350 degrees Fahrenheit. Grease and flour three 9-inch round cake pans and set aside.

2. In a large bowl, cream together 1/2 cup butter and shortening until light and fluffy. Add 2 cups granulated sugar and continue to beat until well combined.

3. Separate the eggs. Beat the yolks one at a time into the creamed mixture, then stir in 1 tablespoon vanilla extract.
